Shogaol

6-gingerol is a dry-aged ginger in which 6-gingerol has been converted to the highly pungent (160,000 SHU) derivative, 6-shogaol. Fresh ginger contains 1-3% gingerol by dry weight. Although the gingerols in fresh ginger are potent, ginger does not reach its full potential until it has aged, and gingerols are converted into their corresponding shogaols.

6-gingerol is by far the most plentiful gingerol in ginger, and 6-gingerol and its corresponding metabolite, 6-shogaol, have been the subject of numerous studies. The dose of 6-sholgaol in just one capsule (25 mg) exceeds the dose used in many studies but is well within safe limits.
