6-gingerol is a dry-aged ginger in which 6-gingerol has been converted to the highly pungent (160,000 SHU) derivative, 6-shogaol. Fresh ginger contains 1-3% gingerol by dry weight. Although the gingerols in fresh ginger are potent, ginger\u00a0does not reach its full potential until it has aged, and\u00a0gingerols are converted into their corresponding shogaols.<\/p>\n
